Watermelon Cookies Recipe



Hello! I'm here today to share with you how to make these cute looking watermelon cookies! Do note that you need a lot of patience making this as there is a lot of waiting time involved!



So let's get started!







Incorporate the butter and sugar and beat it till light and fluffy.

Beat in the egg and vanilla extract

Combine the flour, salt and baking powder: gradually add to creamed mixture and mix well. Roll the tough on a lightly floured surface


Divide the dough like in the picture below. Put food colouring.
(red for the largest dough and green for smaller dough, leaving the other dough without any colour on) Make sure you put enough colouring as the colour will lighten when baking. 

This is how they should look like. Wrap it with cling wrap and leave it in the fridge for 2 hours.
They must be left in the fridge until solid.

After 2 hours, roll the red dough into a log and the green and plain dough into a rectangle, having the same width as the red log.


 Roll up and encircle red dough with the plain dough

And then with the green dough. Put back into the fridge for another 1 hour ++ until firm. It is crucial for it to be solid to enable even cutting later on.

Cut them up into 0.5cm-1cm thick. Cut them into half and lay it on a cookie sheet. Bake at 180°C for 8-10 minutes. 

Melt some Chocolate chips using a double boiler and put it into a plastic bag, cutting a small hole to draw the watermelon seeds once the cookies are cooled.
